The current trend in restaurants is creating “imperfect” desserts. Not regular shapes, but essentially a sweet mess on a plate. Textures and sweet ingredients of various sizes and shapes, seemingly carelessly arranged. One excellent example of a trendy dessert is the popular English strawberry summer dessert Eton mess, which is named after the old English Eton College and is traditionally served after the cricket match there. It’s not difficult to prepare, and the result is perfect.

Procedure

1) Break the meringues, prepared from egg whites, lemon zest, juice, and sugar, into larger pieces.

2) Whip the cream until stiff. Divide the fresh strawberries in half, blend one half into a puree and gently fold it into the whipped cream. Cut the other half of the strawberries into smaller pieces and sweeten them. We recommend adding a bit of grated lime zest and finely chopped lemongrass stalk. Mix everything with a tablespoon of strawberry puree.

3) Place the cream-strawberry mixture on a plate using a spoon or piping bag, according to your imagination, add variously sized fragments of meringues, and add the strawberry mixture. “Mess” means “disorder” in English, so there are no limits to creativity in serving. You can also layer the mixture in wider glasses.

4) Perfectly chilled, with a glass of homemade lemonade, Eton mess is the best summer dessert.
