- 500g fresh spinach
- 1 medium onion
- 2 cloves of garlic
- 2 eggs
- 100g grated gouda
- 1 tablespoon fresh thyme
- 2 tablespoons butter
- breadcrumbs
- oil
- salt and pepper
Sauté the onion in butter until golden, at the end add a few cloves of garlic sliced, lightly sauté. Add fresh spinach and simmer for a while. Transfer this mixture to a bowl and blend in several places with an immersion blender. It should not become a puree – we just need to mash part of the spinach. Add 2 eggs, 100g grated cheese, thyme, salt, and pepper to the slightly cooled spinach, and add enough breadcrumbs to form patties by hand, which are then coated in breadcrumbs and fried. Serve with mashed potatoes as a side dish.
