Ingredients for 10 servings
- 150 g egg whites
- 220 g granulated sugar
- 2 tablespoons corn starch
- 2 teaspoons white wine vinegar
- 125 g whipping cream
- 125 g mascarpone
- 250 g strawberries
Preheat the oven to 150°C. Measure the egg whites into a bowl and whisk at low speed until stiff peaks form when the beaters are lifted. Then gradually add the sugar, whisking thoroughly to make the meringue firm and glossy.
Add the starch and vinegar and lightly whisk. Place the whipped mixture into a piping bag and shape into a circle with a diameter of 9 cm. Reduce the oven temperature to 95°C, place the baking sheet with the Pavlova in the oven, and bake for 80 minutes. Then turn off the oven and let the Pavlova cool completely inside.
Whip the cream with mascarpone, spread it on the Pavlova, add strawberries, and garnish with mint. Serve immediately.
