Ingredients
- 480 g kohlrabi
- 80 g yellow onion
- 2 g nutmeg (ground)
- 60 g whipping cream (33%)
- 5 g salt
- 3 g black pepper (ground)
- 200 g potatoes (peeled)
- 8 g vegetable oil
- 400 ml water or broth
- 4 g fresh chives
- 40 g baguette for croutons
- 2 g fresh thyme
Procedure
- Clean and dice the onion into small cubes. Sauté it in part of the oil until lightly golden.
- Cut the potatoes into cubes, add them to the onion along with the thyme. Pour in water or broth and cook until soft.
- Peel the kohlrabi, cut into cubes the same size as the potatoes, and cook until soft.
- Season with salt, pepper, and add nutmeg. Blend everything until smooth.
- Add the cream and briefly cook.
- Prepare the croutons: Cut the baguette into cubes, season with salt and pepper, and bake in the remaining oil in the oven until golden.
- Garnish the soup with freshly chopped chives and croutons.
