Kohlrabi cream with potatoes and croutons

Ingredients

  • 480 g kohlrabi
  • 80 g yellow onion
  • 2 g nutmeg (ground)
  • 60 g whipping cream (33%)
  • 5 g salt
  • 3 g black pepper (ground)
  • 200 g potatoes (peeled)
  • 8 g vegetable oil
  • 400 ml water or broth
  • 4 g fresh chives
  • 40 g baguette for croutons
  • 2 g fresh thyme

Procedure

  1. Clean and dice the onion into small cubes. Sauté it in part of the oil until lightly golden.
  2. Cut the potatoes into cubes, add them to the onion along with the thyme. Pour in water or broth and cook until soft.
  3. Peel the kohlrabi, cut into cubes the same size as the potatoes, and cook until soft.
  4. Season with salt, pepper, and add nutmeg. Blend everything until smooth.
  5. Add the cream and briefly cook.
  6. Prepare the croutons: Cut the baguette into cubes, season with salt and pepper, and bake in the remaining oil in the oven until golden.
  7. Garnish the soup with freshly chopped chives and croutons.
