- 500 g halloumi cheese
- 250 g cherry tomatoes
- 2 avocados
- 1 shallot
- 10 slices of baguette
- clove of garlic
- 2 tablespoons white wine vinegar
- juice of half a lemon
- handful of basil
- olive oil
- salt and pepper
Drizzle the slices of baguette with olive oil and toast them until golden brown.
Cut the tomatoes in half and mix them in a bowl with chopped shallot, olive oil, wine vinegar, and a pinch of salt and pepper.
Scoop the avocados out of their skins, place them in a bowl, and mash or blend them with a fork. Add a pinch of salt and lemon juice.
Rub the toasted slices of baguette with garlic, spread the avocado mixture on them, top with tomatoes and grilled halloumi cheese, and finally garnish with basil.
